2016 Rose of Cabernet Sauvignon
A crisp light Rose, hints of citrus, white pepper and floral notes.
Cabernet Sauvignon from Napa Valley isn’t a common one to make rose out of. However to enhance our 2016 Napa Cabernets we sacrificed a little juice to concentrate the flavors. With that juice, we made this Rose.
Crisp, light and delicate our 2016 Napa Valley Rose of Cabernet Sauvignon shows nice floral and strawberry notes with a hint of spice
Soda Canyon, Creek Vineyard
"The 2016 budbreak was right on time, after several years of early onset; bloom occurred mid-May to early June. Summer brought consistent, moderate weather for optimal development of flavors across all varieties. Our precision timing in the vineyard became crucial during harvest, when we experienced a heat spike in mid-September. We hurried to bring in cabernet and other bordeauxs, then enjoyed a few days rest as temperatures cooled off. Our napa Bordeaux varieties from 2016 are of exceptionally high quality—the wines show depth, complexity and balanced acidity
Picked during the cool of the night, we hand sorted and destemmed the fruit into 1-1.5 ton tanks and immediately extracted 10-15% of the juice to create this crisp, light Rose. By limiting skin time we kept the color light for the rose and by removing juice we enhanced the color of our Cabernet. Fermented in Stainless steel at or below 50 degrees Fahrenheit for approx 32 days
